Preparation

    Prepare the Ingredients

    Finely chop the onions, tomatoes, and mince the garlic and ginger. Cut the chicken into bite-sized pieces.

Cooking

    Sauté Onions

    In a large pot or pan, heat 2 tablespoons of oil over medium heat. Add the chopped onions and sauté until they are golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger, cooking for another 2-3 minutes until fragrant.

    Cook the Chicken

    Add the chicken pieces to the pot and cook until they are no longer pink, about 5-7 minutes.

    Add Spices

    Stir in the garam masala, turmeric powder, coriander powder, red chili powder, and salt. Cook for 2 minutes to allow the spices to bloom.

    Add Tomatoes

    Add the chopped tomatoes and cook until they break down and become soft, about 5 minutes.

    Add Coconut Milk and Water

    Pour in the coconut milk and water, stirring well to combine. Bring the mixture to a gentle simmer.

    Reduce the heat to low and let the curry simmer for 20-25 minutes, or until the chicken is fully cooked and tender.
