Rinse the Lentils
In a fine mesh strainer, rinse the red lentils under cold water until the water runs clear. This helps remove any dirt or debris.

Sauté the Aromatics
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

Combine Ingredients
Add the rinsed lentils, vegetable broth, coconut milk, diced apple, curry powder, turmeric, cumin, salt, and pepper to the pot. Stir well to combine.

Simmer the Soup
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 25-30 minutes, or until the lentils are tender.

Blend the Soup
Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer it to a blender in batches.
Serving

Serve the Soup
Ladle the soup into bowls and add a scoop of cooked rice on top of each serving. Garnish with additional spices if desired.
