Preparation

    Prepare Mangoes

    Peel the ripe mangoes, remove the pit, and chop them into small pieces. You should have about 2 cups of mango pieces.

    Chop Vegetables

    Finely chop the onion, and mince the garlic cloves. Grate the ginger and have all prepared ingredients ready.

Cooking

    Combine Ingredients

    In a large saucepan, add the chopped mangoes, onion, minced garlic, and grated ginger. Stir to combine.

    Add Spices and Sweeteners

    Add ground cumin, ground coriander, turmeric powder, red chili powder, salt, brown sugar, and apple cider vinegar to the saucepan. Mix well.

    Simmer

    Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally until the chutney thickens.

Finishing

    Cool and Store

    After 30 minutes, remove the saucepan from heat and let the chutney cool. Once cooled, transfer it to sterilized jars and store in the refrigerator.
