Kofta Preparation

Prepare the Kofta Mixture
In a mixing bowl, combine the cottage cheese, boiled and mashed potatoes, cornflour, garam masala, and salt. Mix well until a smooth dough is formed.

Shape the Koftas
Divide the mixture into small equal portions and roll them into smooth balls.

Fry the Koftas
Heat oil in a frying pan over medium heat. Once the oil is hot, carefully drop the kofta balls into the oil, frying them in batches until golden brown.

Drain Excess Oil
Remove the fried koftas and place them on paper towels to drain excess oil.
Gravy Preparation

Prepare Nut Paste
Soak the cashew nuts and almonds in warm water for about 30 minutes, then drain and blend them into a smooth paste using a little water.

Add Ginger-Garlic
Add ginger-garlic paste and sauté for another minute until the raw smell disappears.

Cook Tomato Mixture
Mix in the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture.

Add Nut Paste and Simmer
Add the nut paste and water to the pan, stirring well. Let it simmer for 5-7 minutes.

Add Cream and Final Seasoning
Stir in the cream and let it cook for another 2 minutes. Adjust salt to taste.

Combine Koftas with Gravy
Carefully place the fried koftas in the gravy and let them soak for a couple of minutes before serving.

Garnish
Garnish with chopped cilantro before serving.
