Preparation

    Rinse the Rice

    Wash the basmati rice under cold running water until the water runs clear. This removes excess starch.

    Chop the Onion

    Finely chop the medium onion and set aside.

    Prepare the Green Chili

    Slit the green chili lengthwise, keeping the seeds intact for less heat.

    Chop Fresh Cilantro

    Roughly chop the fresh cilantro for garnish.

Cooking

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Add the rinsed basmati rice and 1 tsp of salt. Stir, cover, and simmer on low heat for about 15-20 minutes until the rice is cooked and water is absorbed.

    Prepare the Tempering

    In a separate pan, heat 2 tablespoons of vegetable oil over medium heat. Add 1 tsp of mustard seeds and 1 tsp of cumin seeds. Allow them to crackle.

    Add Aromatics

    Add the chopped onion and slit green chili to the tempered oil. Sauté until the onion is translucent.

    Mix in Spices

    Stir in 1 tsp of turmeric powder and 1 tsp of black pepper, and cook for a minute until fragrant.

    Combine Rice and Flavor

    Once the rice is cooked, fluff it with a fork and add it to the pan with the tempered spices. Pour in 3 tablespoons of lemon juice and add 1 tablespoon of lemon zest. Mix well to combine.

    Garnish and Serve

    Garnish the lemon rice with chopped cilantro and roasted peanuts. Serve warm.
