Prepare the Marinade
In a bowl, combine the cayenne pepper, turmeric powder, cumin seeds, coriander powder, cardamom pods, cloves, and cinnamon stick. Mix well to create the spice blend.

Marinate the Lamb
Add the lamb chunks to the spice blend and mix thoroughly, ensuring the lamb is well coated. Cover and let it marinate for at least 1 hour, or overnight in the refrigerator for deeper flavor.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Brown the Lamb
Add the marinated lamb to the pot, stirring well to brown on all sides. This should take about 10 minutes.

Incorporate Tomatoes
Stir in the diced tomatoes and cook for 5 minutes until they soften and combine with the lamb.

Add Potatoes and Water
Add the cubed potatoes and pour in the water. Stir well to combine all ingredients.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes, or until the lamb is tender and the potatoes are cooked through.

Season and Serve
Taste the vindaloo and adjust the seasoning with salt if necessary. Serve hot with rice or naan.
