Prepare the Ingredients
Gather all the ingredients and chop the onion, tomato, and slit the green chilies.

Add Ginger-Garlic Paste
Stir in the ginger-garlic paste and sauté for another 1-2 minutes until the raw smell disappears.

Add Tomatoes and Spices
Add the chopped tomatoes and cook until they soften. Then, add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes.

Cook the Lamb
Add the lamb cubes to the pot and mix well to coat them with the spice mixture. Cook for about 5 minutes, stirring occasionally.

Add Water and Simmer
Pour in the water, bring to a boil, then reduce the heat to low. Cover and let it simmer for 45 minutes or until the lamb is tender.

Finish with Ajwain and Garam Masala
Once the lamb is tender, sprinkle the ajwain seeds and garam masala over the dish. Stir and cook for an additional 5 minutes.

Add Green Chilies
Finally, add the slit green chilies and stir well. Cook for another minute before removing from heat.
