Preparation

    Prepare the Lamb

    Cut the lamb shoulder into bite-sized chunks and set aside.

    Slice the Onions

    Finely slice the onions and set them aside for cooking.

    Mince the Garlic and Grate the Ginger

    Mince the garlic cloves and grate the ginger. Set them aside.

    Brown the Onions

    In a large heavy-bottomed pot, heat some oil over medium heat. Add the sliced onions and sauté until they are golden brown.

    Add Garlic and Ginger

    Add the minced garlic and grated ginger to the pot. Sauté for an additional 2-3 minutes until fragrant.

    Incorporate Spices

    Stir in the ground cumin, ground coriander, garam masala, turmeric powder, and red chili powder. Cook the spices with the onion mixture for about 1-2 minutes.

    Brown the Lamb

    Add the lamb chunks to the pot and stir well to coat them in the spice mixture. Cook for about 5-7 minutes until the lamb is browned on all sides.

    Add Yogurt and Water

    Stir in the plain yogurt and mix well. Then add the water, and bring the mixture to a gentle simmer.

    Cover the pot and reduce the heat to low. Let the curry simmer for about 1.5 to 2 hours, stirring occasionally, until the lamb is tender.

    Once the lamb is tender, season with salt to taste. Garnish with chopped fresh cilantro before serving.
