    Prepare the Ingredients

    Gather and prepare all ingredients. Dice the onion, carrots, and slice the green onions. Mince the garlic and grate the ginger.

    Cook the Lamb

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground lamb and cook until browned and cooked through, about 5-7 minutes. Season with black pepper and salt to taste. Remove the lamb from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining vegetable oil (2 tablespoons). Add the diced onion and carrots, and sauté for 3-4 minutes until they start to soften. Add the minced garlic and grated ginger, sautéing for an additional 1-2 minutes until fragrant.

    Combine the Ingredients

    Add the cooked jasmine rice to the skillet and mix well, breaking up any clumps. Stir in the cooked lamb, frozen peas, soy sauce, and sesame oil. Cook for another 5-7 minutes, stirring frequently, until everything is heated through and the rice has slightly crisped up on the bottom.

    Remove the skillet from heat. Stir in the sliced green onions and adjust seasoning with more salt if needed. Serve hot.
