Biryani Directions

    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Cook the Onions

    In a large pot, heat oil over medium heat. Add the sliced onions and sauté until golden brown.

    Add Ginger-Garlic

    Add the ginger-garlic paste to the pot and cook for another 2 minutes until fragrant.

    Cook Tomatoes

    Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes are soft.

    Brown the Lamb

    Add the cubed lamb to the pot. Cook until the lamb is browned on all sides.

    Add Spices and Herbs

    Add the yogurt, biryani masala, chopped cilantro, and mint leaves. Mix well and cook covered for about 10 minutes.

    Combine Ingredients

    Add water to the pot and bring it to a boil. Once boiling, add the soaked rice and whole spices.

    Cook the Biryani

    Cover the pot with a lid and let it cook on low heat for 20-25 minutes, or until the rice is fully cooked and the liquid is absorbed.

    Finishing Touch

    Remove from heat and let it sit covered for an additional 10 minutes before fluffing with a fork.

    Mix Raitha Ingredients

    In a bowl, combine the yogurt, grated cucumber, and chopped mint leaves.

    Season the Raitha

    Season with salt to taste and stir until well combined.

    Serve Raitha

    Serve chilled alongside the lamb biryani.
