Method

Preparing the Flatbreads

    Cook the Parottas

    In a large skillet, heat 1 tablespoon of oil over medium heat. Add 2 parottas at a time and cook until golden brown on both sides. Remove and let them cool slightly, then shred them into small pieces.

Making the Curry

    Sauté Vegetables

    In the same skillet, add another tablespoon of oil. Add the chopped onion and green chilies. Sauté until the onions are translucent.

    Add Tomatoes and Spices

    Add the diced tomato and ginger-garlic paste to the skillet. Stir well and cook until the tomatoes are soft. Add turmeric powder, red chili powder, garam masala, and salt. Mix well.

    Combine Shredded Parottas

    Add the shredded parottas to the skillet. Mix well with the curry masala, ensuring the parottas are well-coated. If using, add the cooked chicken or vegetables at this stage.

    Cook the Eggs (Optional)

    If you are using eggs, push the mixture to one side of the skillet, crack the eggs into the empty side, and scramble them until cooked through. Mix everything together.

    Finish with Coriander

    Garnish with fresh coriander leaves and serve hot.
