    Prepare Tamarind Water

    Soak the Malabar tamarind in warm water for about 15 minutes. Once softened, extract the tamarind juice by squeezing it and straining it into a bowl. Set aside.

    Marinate Fish

    In a bowl, marinate the fish pieces with turmeric powder, red chili powder, coriander powder, and salt. Let it sit for at least 15 minutes.

Cooking

    Heat Oil and Temper Spices

    In a large pan, heat the coconut oil over medium heat. Add mustard seeds and let them splutter. Then add curry leaves and sauté for a few seconds.

    Sauté Aromatics

    Add the chopped onion, ginger, garlic, and slit green chilies to the pan. Sauté until the onions turn translucent.

    Add Tomato

    Add the chopped tomato to the pan and cook until it becomes soft and mushy.

    Combine Fish and Tamarind Water

    Gently add the marinated fish pieces to the pan. Pour in the tamarind water and add the remaining water. Mix gently to combine.

    Simmer the Curry

    Let the curry simmer on low heat for about 15-20 minutes, or until the fish is cooked through and the flavors meld together.

    Finish with Garam Masala

    Sprinkle garam masala over the curry, stir gently, and let it cook for another 2-3 minutes.
