To Make the Flatbread

    Prepare the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Gradually add water and mix until a dough forms. Knead the dough for about 5-7 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

    Roll the Flatbreads

    After resting, divide the dough into equal portions. Roll each portion into a thin circle on a floured surface.

    Cook the Flatbreads

    Heat a skillet or tawa over medium heat. Cook each flatbread for 1-2 minutes on each side until golden brown. Brush with a little oil while cooking.

To Make the Filling

    Prepare the Eggs

    In a bowl, beat the eggs with salt and pepper. Set aside.

    Cook the Vegetables

    In a skillet, heat 2 tablespoons of oil over medium heat. Add sliced onions and sauté until they soften. Add diced tomatoes and chopped green chili, cooking for another 2-3 minutes until the tomatoes are soft.

    Add the Eggs

    Pour the beaten eggs into the skillet with the vegetables. Cook while stirring until the eggs are fully cooked and scrambled, about 3-4 minutes.

    Assemble the Kathi Rolls

    Take a flatbread and spread a layer of yogurt and chutney on it. Place a portion of the egg and vegetable filling in the center, sprinkle with chopped coriander leaves, and fold the flatbread to enclose the filling.

    Serve

    Serve the Kathi rolls warm, with extra chutney on the side for dipping.
