    Wash the lemons thoroughly under running water. Cut each lemon into quarters, removing any seeds if present.

    Wash the green chilies and slice them into halves lengthwise. You can adjust the quantity based on your spice tolerance.

    In a mixing bowl, combine salt, turmeric powder, red chili powder, mustard seeds, fenugreek seeds, and asafoetida. Mix well to create a spice blend.

    In a large glass jar, layer the lemon quarters and green chilies, sprinkling the spice mix between the layers. Ensure all lemons are coated with the spice mix.
