    Prepare the Spice Mix

    In a small bowl, combine cayenne pepper, turmeric, cumin seeds, coriander powder, and black mustard seeds. Set aside.

    Sauté Onions

    Heat vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they become translucent and start to brown, about 5-7 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Cook for an additional 2-3 minutes until fragrant.

    Brown the Goat Meat

    Add the goat meat chunks to the pot. Sear the meat until it is browned on all sides, about 8-10 minutes.

    Incorporate Spice Mix and Tomatoes

    Sprinkle the prepared spice mix over the meat and stir to coat evenly. Then add the diced tomatoes and cook for another 5 minutes.

    Add Potatoes and Water

    Add the cubed potatoes to the pot followed by 500 ml of water. Season with salt to taste. Stir well.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the goat meat is tender and the potatoes are cooked through.

    Adjust Seasoning

    Taste the vindaloo and adjust seasoning with more salt or cayenne pepper if desired. Stir well before serving.

    Serve

    Serve hot with rice or naan bread, garnished with fresh cilantro if desired.
