Preparation Steps
- 1
Marinate the Goat Meat
In a bowl, combine the goat meat with turmeric powder, salt, and half of the crushed black pepper. Mix well and let it marinate for at least 30 minutes.
Cooking Steps
- 2
Heat the Oil
In a large frying pan or skillet, heat the coconut oil over medium heat until hot.
- 3
Sauté Onions
Add the finely sliced onions to the hot oil and sauté until they turn golden brown.
- 4
Add Ginger-Garlic Paste
Stir in the ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.
- 5
Cook the Goat Meat
Add the marinated goat meat to the pan. Cook on medium heat for about 10 minutes, stirring occasionally.
- 6
Add Tomatoes and Green Chilies
Once the meat is browned, add the chopped tomatoes and slit green chilies. Cook until the tomatoes soften.
- 7
Add Curry Leaves and Remaining Spices
Stir in the curry leaves, remaining crushed black pepper, and garam masala. Cook for an additional 10 minutes, allowing the flavors to meld.
- 8
Final Adjustments
Taste and adjust salt as necessary. Cook until the goat is tender and the oil starts to separate from the masala.
- 9
Serve
Garnish with fresh cilantro if desired and serve hot with rice or flatbread.
