    Prepare the Ingredients

    Gather all the ingredients and prepare them by chopping the vegetables and cubing the goat meat.

    Sauté the Base

    In a large pot, heat the cooking oil over medium heat. Add the chopped onions and sauté until golden brown.

    Add Aromatics

    Stir in the minced garlic, ginger, and green chili. Sauté for another 2-3 minutes until fragrant.

    Cook the Goat Meat

    Add the cubed goat meat to the pot. Cook until the meat is browned on all sides, about 5-7 minutes.

    Incorporate Spices

    Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Stir well to coat the meat with the spices.

    Add Tomatoes and Water

    Add the chopped tomatoes and water to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for 1 hour, or until the goat meat is tender.

    Add Vegetables

    After an hour, add the diced potatoes and carrots to the pot. Stir to combine, cover, and simmer for an additional 20-25 minutes, or until the vegetables are cooked through.

    Finish with Cilantro and Garam Masala

    Once the vegetables are tender, stir in the garam masala and chopped cilantro. Adjust seasoning with salt if needed, and cook for another 5 minutes.
