    Marinate the Goat

    In a bowl, combine the goat meat with turmeric powder, salt, and red chili powder. Mix well and let it marinate for at least 30 minutes.

    Heat Oil

    In a large pot or heavy-bottomed pan, heat the cooking oil over medium heat.

    Sauté Onions

    Add the chopped onions and sauté until they turn golden brown, about 8-10 minutes.

    Add Garlic, Ginger, and Green Chilies

    Stir in the minced garlic, ginger, and slit green chilies. Sauté for another 2-3 minutes until fragrant.

    Add Spices

    Add cumin seeds, coriander powder, turmeric powder, and salt to the mixture. Cook for 2 minutes, stirring continuously.

    Add Goat Meat

    Add the marinated goat meat to the pot and cook on high heat for about 5-7 minutes, browning the meat on all sides.

    Add Tomato Puree

    Pour in the pureed tomatoes and stir well. Cook for an additional 5 minutes until the oil starts to separate from the mixture.

    Simmer

    Pour in the water and bring to a boil. Reduce the heat to low and cover the pot. Let it simmer for 1.5 to 2 hours or until the goat is tender, stirring occasionally.

    Finish with Garam Masala

    Once the meat is tender, add garam masala and adjust salt if necessary. Stir well and let it cook for another 5 minutes.

    Serve hot with rice or naan, garnished with fresh cilantro if desired.
