Preparation of Biryani

    Marinate the Goat Meat

    In a bowl, mix goat meat with yogurt, ginger-garlic paste, salt, green chilies, chopped cilantro, and chopped mint leaves. Let it marinate for at least 1 hour (or overnight in the refrigerator for best results).

    Fry the Onions

    In a large pot, heat cooking oil or ghee over medium heat. Add the sliced onions and fry until they are golden brown. Remove half for garnishing later.

    Cook the Goat Meat

    Add the marinated goat meat to the pot with remaining onions. Cook for about 10 minutes until the meat is browned.

    Add Tomatoes and Spices

    Stir in chopped tomatoes and whole garam masala. Cook until the tomatoes soften and the oil separates from the mixture.

    Add Rice

    In another pot, bring 4 cups of water to a boil. Add the rinsed basmati rice and cook until it's 70% done. Drain the rice and layer it over the goat meat mixture.

    Steam the Biryani

    Cover the pot with a lid and let it cook on low heat for about 30 minutes, allowing the flavors to meld and the rice to finish cooking.

    In a bowl, mix yogurt, grated cucumber, chopped mint leaves, and salt. Adjust seasoning according to taste.
