Preparation

    Prepare the Carrots

    Wash and peel the carrots. Grate them using a box grater or food processor.

    Fry the Nuts

    In a pan, heat 1 tablespoon of ghee on medium heat. Add the chopped cashews and almonds, sauté until golden brown. Add the raisins and cook for an additional minute. Remove and set aside.

Cooking

    Cook the Carrots

    In the same pan, add the remaining ghee. Once melted, add the grated carrots and sauté for about 5-7 minutes until they soften.

    Add Milk

    Pour the milk into the pan with the carrots. Bring to a boil and then reduce the heat to medium-low. Simmer until the milk reduces and thickens, stirring occasionally.

    Sweeten the Halwa

    Once the milk has thickened, add sugar and cardamom powder. Stir well and cook for another 5-10 minutes until the mixture is well combined and the sugar has dissolved.

Finishing Touches

    Garnish and Serve

    Remove from heat and transfer the gajar ka halwa to a serving dish. Top with the fried nuts and raisins. Serve warm or at room temperature.
