    Prep the Eggplant

    Wash the eggplants thoroughly. Cut them into 1-inch cubes and place them in a bowl of salted water for about 15 minutes to reduce bitterness.

    Chop Vegetables

    Finely chop the onion, garlic, ginger, tomatoes, and green chili. Set aside.

Cooking

    Fry the Eggplant

    Heat oil in a frying pan over medium heat. Drain the eggplant cubes and pat them dry with a paper towel. Fry the eggplant in batches until golden brown and cooked through. Remove and set aside on a paper towel to drain excess oil.

    Sauté Aromatics

    In the same pan, add cumin seeds and let them splutter. Add chopped onions and sauté until they are translucent. Add garlic, ginger, and green chili, and cook for another 2-3 minutes.

    Add Tomatoes and Spices

    Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes soften and release their juices, about 5-7 minutes.

    Combine Everything

    Add the fried eggplant to the tomato mixture. Stir to coat the eggplant evenly in the sauce. Pour in the cooking cream and sprinkle garam masala over the top. Mix well and let simmer for another 5 minutes.

    Garnish

    Remove from heat and garnish with fresh coriander leaves before serving.
