Marinate the Chicken
In a bowl, combine chicken thighs with cayenne pepper, ground cumin, ground coriander, turmeric powder, garam masala, salt, and black pepper. Mix well to coat the chicken evenly. Cover and let marinate for at least 30 minutes.

Prepare the Vegetables
While the chicken is marinating, peel and dice the potatoes, chop the onion, mince the garlic cloves, and grate the ginger.

Add Garlic and Ginger
Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Cook the Chicken
Add the marinated chicken to the pot. Cook, stirring occasionally, until the chicken is browned on all sides, about 5-7 minutes.

Add Tomato Sauce and Water
Pour in the tomato sauce and water. Stir to combine, making sure to scrape any browned bits from the bottom of the pot.

Adjust Seasoning
Taste the vindaloo and adjust seasoning if necessary. Add more salt or pepper to taste.

Serve the chicken vindaloo hot, garnished with fresh cilantro if desired. It pairs well with rice or naan.
