Marinating the Chicken

    Prepare the Marinade

    In a mixing bowl, combine yogurt, garam masala, ground cumin, ground coriander, turmeric powder, salt, lemon juice, garlic paste, and ginger paste. Mix well.

    Marinate the Chicken

    Add the chicken chunks to the marinade, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best results.

Cooking the Chicken

    Cook the Chicken

    Preheat your oven to 200°C (400°F). Place the marinated chicken on a baking tray and roast for 20-25 minutes until cooked through and slightly charred. Alternatively, you can grill or pan-fry the chicken.

Making the Sauce

    Sauté the Onions

    In a large pan, heat the oil over medium heat. Add the finely chopped onion and sauté until golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Pureed Tomatoes

    Pour in the pureed tomatoes, red chili powder, and sugar. Cook for 10-15 minutes until the sauce thickens and the oil begins to separate.

    Finish the Sauce

    Stir in the coconut cream or heavy cream, and season with salt to taste. Let it simmer for another 5 minutes.

Combining and Serving

    Combine Chicken and Sauce

    Add the roasted chicken pieces into the sauce, stirring to coat the chicken thoroughly. Cook on low heat for an additional 5 minutes.

    Garnish with chopped cilantro and serve hot with naan or rice.
