Marinade Preparation

Prepare the Marinade
In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice. Mix well to form a smooth marinade.

Marinate the Chicken
Add the chicken strips to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

Heat Oil
In a deep frying pan or wok, heat the oil over medium-high heat until hot but not smoking.

Fry the Chicken
Remove the marinated chicken from the refrigerator. Gently shake off excess marinade and carefully drop the chicken strips into the hot oil, frying in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown and cooked through.

Drain the Chicken
Using a slotted spoon, remove the fried chicken from the oil and place on paper towels to drain excess oil.

Prepare Spices
In the same oil, add dried red chilies and curry leaves. Fry for about 30 seconds until fragrant but be careful not to burn them.

Toss the Chicken
Add the drained chicken back into the pan and toss well with the fried spices. Ensure the chicken is well coated with the spices.
