Prepare the Chicken
Rinse the chicken drumettes under cold water and pat them dry with paper towels. This helps to ensure the skin crisps up nicely during frying.

Make the Coating
In a large mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Mix well to ensure the spices are evenly distributed.

Heat the Oil
In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). Use a thermometer for accurate measurement.

Coat the Chicken
Dip each drumette first into the egg wash, allowing any excess to drip off, then roll it in the flour mixture until fully coated. Shake off any excess flour.

Fry the Chicken
Carefully place the coated drumettes in the hot oil without overcrowding. Fry in batches for about 10-12 minutes or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Drain the Chicken
Once cooked, remove the chicken lollipops from the oil and place them on a plate lined with paper towels to drain excess oil.
