Blend Sauce
Transfer the roasted spices to a blender. Add the grated coconut, turmeric powder, and salt to taste. Blend until a smooth paste is formed, adding a little water if necessary to achieve the desired consistency.

Cook Sauce
Heat oil in a pan over medium heat. Add the coconut spice paste to the oil and cook for about 5-7 minutes until the oil starts to separate from the sauce. Stir occasionally to prevent sticking.

Prepare Vegetables
If using potatoes, peel and cut them into cubes. For mixed vegetables, chop them into bite-sized pieces. If using eggplant, chop it into cubes and soak in salted water for 10 minutes to reduce bitterness. Rinse and drain before use.

Combine with Sauce
Add the cooked vegetables to the coconut spice sauce and mix well. Cook together for an additional 5 minutes to allow the flavors to meld.
