Crust Preparation

Preheat Oven
Preheat your oven to 325°F (160°C).

Make the Crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool.

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Gradually add the granulated sugar and sour cream to the cream cheese mixture, mixing until well incorporated.

Incorporate Eggs and Vanilla
Add the vanilla extract, then add the eggs one at a time, mixing on low speed just until combined. Do not overmix.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake in the oven for 1 hour to cool gradually.

Prepare the Berries
While the cheesecake is cooling, rinse the fresh berries under cold water and pat dry with a paper towel.

In a small bowl, combine the fresh berries with powdered sugar and toss gently to coat.

Once the cheesecake is completely cooled, remove it from the springform pan, and top with the sugared berries. Garnish with mint leaves if desired.
