    Prepare the Ingredients

    Wash the okra thoroughly and pat dry with a towel. Trim the ends and cut them into 1-inch pieces.

    Chop the Vegetables

    Finely chop the onions, tomatoes, green chilies, ginger, and garlic.

Cooking

    Heat the Oil

    In a large pan, heat the oil over medium heat. Once hot, add the chopped onions.

    Sauté Onions

    Sauté the onions for about 5-7 minutes until they turn golden brown.

    Add Ginger and Garlic

    Add the chopped ginger and garlic to the pan and sauté for an additional 2 minutes until fragrant.

    Add Tomatoes and Spices

    Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and oil starts to separate, about 5 minutes.

    Add Okra

    Add the chopped okra to the pan and mix well. Cook for about 10-15 minutes, stirring occasionally until the okra is tender.

    Finish with Garam Masala

    Once the okra is cooked, sprinkle garam masala over the top and mix gently. Cook for another 2 minutes.

    Serve

    Remove from heat and serve hot with roti or rice.
