Preparation of Ingredients

Prepare the Nut Filling
In a food processor, combine the walnuts, almonds, and ground cinnamon. Pulse until the nuts are finely chopped but not pureed. Set aside.

Melt the Butter
In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.
Assembling the Baklava

Add the Nut Filling
Spread half of the nut mixture evenly over the layered phyllo dough. Continue layering another 4 sheets of phyllo, buttering each one.

Finish Layering
Spread the remaining nut mixture over the phyllo, then layer another 8 sheets of phyllo on top, buttering each sheet as before.

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes, making sure to cut all the way through the layers.
Baking and Syrup

Bake the Baklava
Bake in the preheated oven for about 45-50 minutes, or until the baklava is golden brown and crisp.

Soak the Baklava
Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over the hot baklava. Allow it to soak for at least 4 hours, or overnight for best results.
