Prepare the Dough

Mix the Ingredients
In a large mixing bowl, combine the whole wheat flour and salt. Add the oil and mix well. Gradually add water, a little at a time, until the dough begins to come together.

Knead the Dough
Once the dough starts forming, knead it for about 5-7 minutes until it's smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
Prepare the Filling

Cook the Potatoes
Boil the potatoes until they are soft. Drain and let them cool slightly before peeling.

Mash the Potatoes
In a bowl, mash the boiled potatoes until smooth. Add cumin seeds, finely chopped green chilies, ginger, coriander powder, garlic powder, and salt. Mix well until all ingredients are combined.

Add Fresh Herbs
Finely chop the fresh cilantro and mix it into the potato filling. Adjust seasoning to taste.
Assemble and Cook the Parathas

Divide the Dough
After resting, divide the dough into equal portions (about 8-10). Roll each portion into a ball.

Roll the Parathas
Take one dough ball and flatten it slightly. Place a generous amount of the potato filling in the center. Gather the edges to enclose the filling and pinch to seal. Roll it gently into a flat circle.

Serve hot with yogurt, pickle, or your favorite chutney.
