In a skillet over medium heat, add olive oil. Sauté the sliced bell peppers and onions until soft, about 5-7 minutes. If using, add shredded chicken and sauté for an additional 2-3 minutes. Season with salt and black pepper.

Prepare the Fillings

On a clean surface, place one flour tortilla. Sprinkle 1/2 cup of shredded cheese over half of the tortilla. Add a portion of the cooked filling (bell peppers, onions, and chicken) on top of the cheese, then sprinkle another 1/2 cup of cheese over the filling. Fold the tortilla in half to cover the filling.

Assemble the Quesadillas

In the same skillet, add a little more olive oil if necessary. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas.

Cook the Quesadillas

Cut the quesadillas into wedges and serve warm with sour cream and salsa on the side.

In a large bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

Mix Dry Ingredients

Add the lard or vegetable shortening to the dry ingredients. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

Incorporate Fat

Gradually add the warm water to the mixture, stirring until the dough begins to come together.

Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Divide the dough into 10-12 equal pieces.

Cover the pieces of dough with a clean kitchen towel and let them rest for about 30 minutes to 1 hour.

On a lightly floured surface, roll each piece of dough into a thin circle, about 8-10 inches in diameter.

Heat a skillet or griddle over medium-high heat. Cook each tortilla for about 30 seconds on each side or until lightly browned and cooked through.

Keep the cooked tortillas warm in a clean kitchen towel until ready to serve.

Cut the pork shoulder, beef sirloin, and chicken thighs into bite-sized pieces. Season with salt and black pepper.

Prepare the Meat

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook until browned. Remove and set aside.

Cook the Chorizo

In the same skillet, add another tablespoon of olive oil. Sauté the chopped onion, diced tomato, jalapeño, and minced garlic until soft.

Add the seasoned pork, beef, and chicken to the skillet with the sautéed vegetables. Cook until the meat is browned and cooked through.

Return the cooked chorizo to the skillet, mixing everything together. Adjust seasoning with salt and pepper.

Mix in Chorizo

Transfer the mixture to a molcajete or a serving dish. Garnish with chopped cilantro and lime wedges. Serve hot.

Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

Using a fork or a potato masher, mash the avocado until you reach your desired consistency.

Slice the bell peppers and onion into thin strips. Cut the chicken breasts into thin strips as well.
