Prepare the Tortillas
Stack the corn tortillas and cut them into triangles. You can cut each tortilla into 6 or 8 pieces depending on your preferred size.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle immediately.

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, making sure not to overcrowd the pot. Fry them until they are golden brown and crispy, about 2-3 minutes.

Drain and Season
Using a slotted spoon, remove the chips from the oil and drain them on paper towels. While they are still hot, sprinkle with salt and any optional spices to taste.
