    Soak the Beans

    Rinse the pinto beans and place them in a large bowl. Cover them with water and let them soak overnight or for at least 6 hours.

    Cook the Beans

    Drain the soaked beans and transfer them to a pot. Add 6 cups of fresh water and bring to a boil. Reduce heat and let simmer for about 1.5 to 2 hours, or until the beans are tender.

    In a separate skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add minced garlic and sauté for another minute until fragrant.
