Prepare the Potatoes

Peel the Russet potatoes and cut them into thick strips, about 1/4 inch wide.

Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Gradually whisk in the beer until smooth.

Heat the Oil

In a large pot or deep fryer, heat the oil to 350°F (175°C).

Fry the Potatoes

Dip the potato strips into the batter, allowing excess to drip off. Carefully drop them into the hot oil in batches and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Season the Fries

While still hot, toss the fries in additional salt and your desired house seasoning.

Queso Blanco

Melt the Cheese

In a saucepan over medium heat, combine the white American cheese and milk. Stir continuously until the cheese is melted and smooth.

Add Flavor

Stir in the diced green chilies, garlic powder, and onion powder. Mix well and cook for an additional 2-3 minutes.

Serve

If using, stir in the chopped cilantro and serve warm alongside the crispy fries.
