    Prepare the Dough

    In a large bowl, combine the all-purpose flour, baking powder, and salt. Mix well. Add the melted butter and warm water, and knead until a soft dough forms. Cover with a cloth and let it rest for 30 minutes.

    Roll Out and Cut

    After resting, turn the dough onto a floured surface and roll it out to about 1/4 inch thickness. Cut into squares or triangles, about 3 inches across.

    Heat Oil

    In a deep frying pan, heat oil to 350°F (175°C). Make sure there is enough oil to submerge the sopapillas.

    Fry the Sopapillas

    Fry the dough pieces in batches until they puff up and turn golden brown, about 2-3 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

    Cinnamon Sugar Toss

    In a small bowl, mix together sugar and cinnamon. While the sopapillas are still warm, toss them in the cinnamon sugar mixture until well coated.
