Mezcal Preparation

    Harvesting Agave

    Harvest the Espadín agave plants, typically around 7-10 years old.

    Cooking Agave

    Cook the harvested agave hearts (piñas) in an underground oven for about 3 days to convert the starches to sugars.

    Milling Agave

    Once cooked, crush the agave piñas using a traditional stone mill or a mechanical shredder to extract the juices.

    Fermentation

    Transfer the agave juice to fermentation tanks, add yeast, and allow it to ferment for about 5-10 days at room temperature.

    Distillation

    Distill the fermented liquid in a copper pot still, collecting the distillate that will become mezcal.

    Aging (Optional)

    If desired, age the mezcal in oak barrels for a period of time to develop flavors.

    Bottling

    Bottle the mezcal and label it for sale or personal use.
