Prepare Zucchini

Slice Zucchini
Using a mandoline or a sharp knife, slice the zucchini lengthwise into 1/4 inch thick strips. You should get about 20-30 slices depending on the size of the zucchini.

Make Spinach Filling

Sauté Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Combine Filling Ingredients
In a large bowl, combine ricotta cheese, Parmesan cheese, egg, salt, black pepper, and the sautéed spinach. Mix well until smooth.
Prepare Tomato Sauce

Make Tomato Sauce
In a saucepan, combine tomato sauce, dried oregano, dried basil, and salt to taste. Heat over medium heat until warmed through, about 5 minutes. Set aside.
Assemble Rollatini

Fill Zucchini Slices
Take one zucchini slice and place about 1-2 tablespoons of the ricotta-spinach filling at one end. Roll it up tightly and place it seam-side down in a baking dish.

Repeat
Continue filling and rolling the remaining zucchini slices until all the filling is used up.
Bake Rollatini

Add Sauce
Pour the prepared tomato sauce evenly over the assembled zucchini rollatini in the baking dish.

Top with Cheese
Sprinkle the remaining mozzarella cheese on top of the sauce.
