Preparation

1. Prepare the Equipment

Sanitize all brewing equipment, including fermenters, bottles, and utensils, using a sanitizer solution to prevent contamination.

2. Heat the Water

In a large brew kettle, heat 6 gallons of water to approximately 165°F (74°C).

Mashing

3. Add the Malt

Once the water is heated, add 5 lbs of Pale Malt, 1 lb of Crystal Malt, and 0.5 lb of Roasted Barley to the kettle.

4. Mash Process

Allow the mixture to steep at 152°F (67°C) for 60 minutes, stirring occasionally.

Boiling

5. Boil the Wort

After mashing, remove the grains and bring the liquid (wort) to a boil.

6. Add Bittering Hops

Once boiling, add 1 oz of Bittering Hops and boil for 60 minutes.

7. Add Flavor and Aroma Hops

During the last 15 minutes of the boil, add 1 oz of Flavor Hops and 0.5 oz of Aroma Hops.

Fermentation

8. Cool the Wort

After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches 70°F (21°C).

9. Transfer to Fermenter

Transfer the cooled wort to a sanitized fermenter and add the Ale Yeast.

10. Seal and Ferment

Seal the fermenter with an airlock and allow it to ferment in a dark, cool place for 1-2 weeks.

Bottling

11. Prepare Bottles

Sanitize all bottles and caps to ensure a clean environment for bottling.

12. Add Priming Sugar

Boil 3 oz of Priming Sugar in a small amount of water, then cool and add it to the fermenter before bottling.

13. Bottle the Beer

Fill each bottle with beer, leaving about an inch of headspace, then cap each bottle securely.

Aging

14. Condition the Bottles

Let the bottles condition at room temperature for 1-2 weeks to carbonate.

15. Refrigerate and Serve

After conditioning, refrigerate the bottles for at least 24 hours. Serve chilled and enjoy your craft beer!
