    Prepare the Vegetables

    Wash all the vegetables thoroughly. Slice the zucchini and eggplant into ½ inch thick rounds. Cut the bell peppers into quarters, removing the seeds and stems. Halve the cherry tomatoes. Cut the red onion into thick slices, separating the layers.

    Make the Marinade

    In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic (press or finely chop), dried oregano, salt, and black pepper until well combined.

Grilling

    Marinate the Vegetables

    Place all prepared vegetables in a large bowl or a zip-top bag. Pour the marinade over the vegetables and toss to coat evenly. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Preheat your grill to medium-high heat, around 400°F (200°C).

    Place the marinated vegetables on the grill. Grill the zucchini, eggplant, and bell pepper for about 4-5 minutes per side until tender and grill marks appear. Grill the cherry tomatoes and onion slices for about 2-3 minutes per side until they are softened and have grill marks.
