Crab Croquettes

Prepare the Crab Mixture
In a large mixing bowl, combine the crab meat, mayonnaise, Dijon mustard, finely chopped green onions, lemon juice, salt, and black pepper. Mix well until all ingredients are incorporated.

Add Binding Ingredients
Beat the egg in a separate bowl and then add it to the crab mixture. Stir to combine. Gradually add panko breadcrumbs while mixing until the mixture is firm enough to hold shape.

Shape the Croquettes
Using your hands, take a small amount of the mixture and form it into small patties or balls, about 2 inches in diameter. Place them on a tray.

Heat the Oil
In a frying pan, heat the olive oil over medium heat until hot but not smoking.

Fry the Croquettes
Carefully add the formed croquettes to the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove from the pan and place on paper towels to drain excess oil.

Combine Ingredients
In a small bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix thoroughly until well blended.

Chill
Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
