Prepare Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides. Set aside.

Breading Station
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.

Breading the Chicken
Dredge each chicken breast in flour, shaking off the excess, then dip it in the egg, and finally coat it with the breadcrumb and Parmesan mixture. Ensure each piece is well coated.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown. Transfer chicken to a baking dish.
Making Sauce

Prepare the Sauce
In the same skillet, add a little more olive oil if needed. Sauté minced garlic until fragrant. Add diced plum tomatoes, dried oregano, salt, and black pepper. Simmer for about 10 minutes, stirring occasionally.

Assemble the Dish
Pour the tomato sauce over the fried chicken in the baking dish. Top with shredded mozzarella cheese.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
