Beef Preparation

    Season the Beef

    Rub the beef chuck roast with salt and black pepper on all sides.

    Sear the Beef

    In a large Dutch oven, heat the olive oil over medium-high heat. Add the beef roast and sear on all sides until browned, about 4-5 minutes per side. Remove the beef from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, minced garlic, chopped carrots, and chopped celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Liquids

    Pour in the Barolo wine and beef broth, scraping the bottom of the pot to deglaze. Bring the mixture to a simmer.

    Add Herbs

    Add the fresh thyme sprigs and bay leaves to the pot.

    Braise the Beef

    Return the seared beef to the pot, cover, and reduce the heat to low. Let it braise for 3-4 hours until the beef is tender.

    Prepare Vegetables

    Preheat the oven to 425°F (220°C). In a large bowl, combine the diced potatoes, sliced zucchini, and chopped bell peppers.

    Season Vegetables

    Drizzle olive oil over the vegetables, then sprinkle with salt, black pepper, and chopped rosemary. Toss until well coated.

    Roast Vegetables

    Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until golden and tender.
