    Preheat the Oven

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    In a separate bowl, beat the eggs, then add the vanilla and almond extracts. Mix until combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until fully incorporated. Fold in the almonds.

    Shape the Dough

    Transfer the dough onto a lightly floured surface and shape it into a log approximately 12 inches long and 3-4 inches wide.

Baking

    Place the log on the prepared baking sheet and bake for 25-30 minutes, or until the log is golden and firm to the touch.

    Cool and Slice

    Remove the log from the oven and let it cool for about 10 minutes. Once it is cool enough to handle, slice it diagonally into 1/2-inch thick pieces.

    Arrange the slices cut-side down on the baking sheet and return to the oven for an additional 10-15 minutes, or until the biscotti are crisp and lightly toasted.
