Brownie and Toppings

Method

Preparation and Assembly

  1. 1

    Make the Brownie

Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.

  2. 2

    Melt Chocolate and Butter

In a saucepan, melt the dark chocolate and butter over low heat, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugars and Eggs

In a large mixing bowl, combine granulated sugar, brown sugar, and eggs. Whisk until well combined and creamy.

  4. 4

    Combine Mixtures

Add the melted chocolate mixture and vanilla extract to the sugar and egg mixture. Mix until smooth.

  5. 5

    Add Dry Ingredients

Sift in the flour and cocoa powder. Fold gently until just combined.

  6. 6

    Bake Brownies

Pour the brownie batter into the prepared pan and bake for about 25-30 minutes, or until a toothpick comes out with a few moist crumbs.

  7. 7

    Prepare Mixed Berry Coulis

In a saucepan, combine mixed berries and sugar over medium heat. Cook until berries break down and release their juices, about 10 minutes. Blend until smooth and strain if desired.

  8. 8

    Make Chocolate Ganache

Heat cream in a saucepan until just simmering. Pour over chopped chocolate and let sit for a few minutes. Stir until smooth.

  9. 9

    Assemble the Dessert

Cut the brownies into squares. Place a brownie on a plate, drizzle with chocolate ganache, add a scoop of vanilla ice cream, and drizzle with mixed berry coulis.
