Beef Filet

Prepare the Filet

Season the beef filet with salt and black pepper on both sides.

Sear the Filet

Heat olive oil in a skillet over medium-high heat. Add the filet and cook for 4-5 minutes on each side for medium-rare, or until desired doneness.

Rest the Filet

Remove the filet from the skillet and let it rest for 5 minutes before slicing.

Yukon Gold Mashed Potatoes

Boil the Potatoes

Peel and chop Yukon Gold potatoes. Boil in salted water until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and pepper. Mash until smooth and creamy.

Sautéed Green Beans

Sauté the Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

Cook the Green Beans

Add fresh green beans, salt, and pepper. Sauté for 5-7 minutes until tender but still crisp.

Port Wine Demi-Glace

Prepare the Demi-Glace

In a saucepan, melt butter over medium heat. Add chopped shallot and sauté until translucent.

Simmer the Sauce

Pour in port wine and beef stock. Bring to a boil, then reduce heat and simmer until reduced by half, about 15 minutes. Season with salt and pepper.
