    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for an additional 1-2 minutes. Pour in the white wine, scraping the bottom of the pot to deglaze it. Allow wine to reduce for 5 minutes.

    Simmer the Soup

    Add the broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for 30 minutes, stirring occasionally.

    Prepare the Baguette

    While the soup is simmering, preheat the oven to 350°F (175°C). Place baguette slices on a baking sheet and toast in the oven for about 10 minutes, or until golden.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle generously with Gruyère cheese. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden.
