Prepare Grits

Cook Grits

In a medium saucepan, bring water and salt to a boil. Stir in grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened. Stir in butter before serving.

Cook Greens

Sauté Greens

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add collard greens, salt, and pepper. Cook for about 10-15 minutes, until greens are tender.

Make Ham Hock Jus

Simmer Ham Hock

In a pot, combine ham hock, chicken broth, onion, and bay leaf. Bring to a simmer and cook for about 1.5 to 2 hours, until the meat is tender. Remove the ham hock and shred the meat, returning it to the jus.

Cook Bacon and Eggs

Fry Bacon and Eggs

In a skillet, cook applewood bacon until crispy. Remove from pan and set aside. In the same skillet, crack the eggs and fry to your desired doneness.

Make Buttermilk Biscuit

Bake Biscuits

Preheat oven to 450°F (232°C). In a bowl, mix flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk until just combined. Drop spoonfuls onto a baking sheet and bake for 12-15 minutes until golden.
