Sticky Toffee Pudding

Prepare the Dates
In a bowl, combine the pitted dates and boiling water. Add the baking soda and let it sit for about 15 minutes until the dates soften.

Make the Batter
Preheat the oven to 180°C (350°F). In a mixing bowl, cream the unsalted butter and brown sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.

Combine Dry Ingredients
In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Add Dates
Puree the date mixture and fold it into the batter until well combined.

Bake
Pour the batter into a greased baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Toffee Sauce
In a saucepan, combine the heavy cream, brown sugar, and vanilla extract. Cook over medium heat until the sugar dissolves and the sauce thickens slightly, about 5-7 minutes.

Cut the sticky toffee pudding into squares, drizzle with warm toffee sauce, and serve with scoops of vanilla ice cream.
