In a mixing bowl, combine flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, whisk together eggs and buttermilk.

Coat the Shrimp
Dip each shrimp into the egg mixture, then dredge in the flour mixture, ensuring an even coating.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Carefully add the coated shrimp to the hot oil in batches, frying until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
