    Prepare the Eggs

    Place the eggs in a pot and cover with cold water. Bring to a boil over medium heat. Once boiling, cover the pot, remove from heat, and let sit for 12 minutes.

    Cool and Peel

    After 12 minutes, transfer the eggs to an ice bath to cool for about 5 minutes. Once cooled, peel the eggs and slice them in half lengthwise.

    Make the Filling

    Remove the yolks from the egg halves and place them in a mixing bowl. Add mayonnaise, Dijon mustard, salt, and black pepper. Mash and mix until smooth.

    Add Bacon and Onions

    Cook the applewood smoked bacon until crispy, then chop into small pieces. Finely chop the green onions. Fold the bacon and green onions into the yolk mixture.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg white halves.

    Garnish and Serve

    Optionally, garnish with additional green onions or bacon bits. Serve chilled.
